I use a product customization module; will the quote module work with it?

Unfortunately, it is impossible to say in advance if the two modules will be compatible.

The quote module uses the standard Prestashop customization fields to function and display the prices of customized products.

If the customization module you have installed also uses the standard Prestashop fields, the two modules should be compatible. Otherwise, there is little chance they will be.
