Is it possible to add out-of-stock products to the quote?
The quote module is built to respect your store's settings.
If your store is configured to accept the sale of out-of-stock products, then it will be possible to add products to the quote even if they are no longer in stock.
If, on the contrary, out-of-stock sales are not authorized by your store, the quote cannot contain out-of-stock products.
